- Olive Oil
Biniagual Olive Oil is made using olives from around 1000 olive trees of the Arbequina variety. This variety gives the oil, which is pressed cold and so pure olive juice, a green fruity taste. Biniagual olive oil is extra virgin olive oil, pressed cold on the same day the fruit is harvested, which means that it has extremely low levels of acidity.
Just as when we produce our wines, we are committed to producing a product of the highest quality, from the fruit itself to the production process involved. Our sheep supply natural fertiliser for the olive trees and get rid of any weeds naturally. The olives are harvested by hand between the end of October and the end of November. We take them to a nearby olive press which belongs to the Designation of Origin Oli de Mallorca where they are pressed mechanically and cold on the same day they are harvested, in order to help preserve their valuable ingredients.
Olive farming has been practised for centuries in Mallorca. The Roman and Arab colonists were well aware of the value of olive oil. The Arabs planted the first olive trees at Biniagual back in the 13th Century.
